Technology of Lycopene 

1. PRODUCT GENERALITIES

Lycopene is an carotenoid antioxidant molecule present in a wide variety of fruits and vegetables (tomatoes). It can be extracted from these natural sources.

In our technology it is produced by submerged fermentation, using the mould Blakeslea trispora.

2. USES

Lycopene is a natural red pigment, but the main use in food industry is joined to its antioxidant properties.

3. TECHNOLOGY

Main features of the industrial lycopene production process available through ITTC:

Final lycopene concentration in fermentation broth: 2.5±0.5 g/L;

Fermentation time: 120±12 hrs;

Recovery yield of purified lycopene: 75±5 %
